2 QT of heavy cream or milk
2 QT of Picante sauce, pureed in a blender
Cumin to taste
Red pepper to taste
Puree the Picante then pour through a
strainer to remove chunks. Add to melting cheese and other ingredients, heating over medium heat, stirring frequently to avoid burning. Once cheese begins to melt, turn heat down to low and simmer until completely melted. Pour into pre-heated chocolate fountain. If mixture becomes thick, add additional cream or milk to thin. White Chocolate & Cambozola Fondue - Chocolate Fondue
Mix 1 c. heavy cream with 1 1/2 lbs. white chocolate. Cook over low heat until melted. Add Cambozola cheese, stirring constantly until melted. For dipping: Toast 1 c. sweet coconut until golden brown and crush 1 c. frosted flakes into a dust. Dip strawberries, banana chunks, pineapple chunks, and melon into chocolate fondue recipe, then dip into frosted flakes dust and toasted coconut or sprinkle over fruit with a spoon. Serves 8. -- Modify this chocolate fondue recipe for use in chocolate fountains by adjusting the quantity to accommodate a home-model chocolate or commercial chocolate fountain, and substituting light cream or milk for a portion of the heavy cream so that the mixture flows smoothly over the fountain tiers.
